Being a vegetarian will lower the risk of death from heart disease, have lower cholesterol levels, low blood pressure, and hypertension, and type 2 diabetes and moreover, they have a lower body mass index. when compared to meat-eaters.but if you are a vegetarian who eats veggie burgers, and fries every day or too often at restaurants then will you still be healthier? People choose to be vegetarian for a variety of reasons. The different cultures in the world would choose diets on vegetarian foods. Different people consider the word ‘vegetarian in different ways. Some are the strictest type of being vegan, who do not eat any animal products. But there is another type called the Lacto-vegetarian who eat dairy products in addition to their vegan diet. Some eat eggs with their vegan diet and are called the ovo-vegetarian and some are called the Lacto-ovo-vegetarian consume both the dairy product and eggs with the vegan diet. 

In restaurants, mostly you get dishes that are cheesy and fattening. And when you eat the portions of restaurants including pasta, nuts, rice, and cheese you will add up weight. So it is important for all vegetarians to make sure that their food has all the key nutrients. So here are some healthy vegan food recipes that you would love to try for breakfast, lunch, and dinner.

Air fryer taquitos with black beans and cauliflower.

There is no addition of unhealthy fat and is completely a healthy meal, that is stuffed with mushrooms, black beans, and southwest taco seasoning. 


How to make

Preheat the air fryer for 8 minutes at 320°F. Take a saucepan and cook the mushrooms, bell pepper, and garlic with ¼ cup of water over medium heat for 10 minutes while stirring occasionally. Add 1 to 2 tablespoons of water at a time to prevent from sticking, stir the beans, taco seasoning, and tomato paste, and cook for 5 minutes stirring occasionally. Remove from heat and stir in riced cauliflower, salt, and lemon juice and adjust the seasoning by taste. According to the directions of the package, warm the tortillas, and wrap them in a kitchen towel to keep them warm.

To assemble taquitos, lay a warm tortilla on the clean surface and spoon tablespoons to fill horizontally across the middle of the tortilla.  Roll it and tuck it underfilling and roll tightly to make it thin. place the assembled taquitos, on the tray with an additional kitchen towel. keep it covered and repeat it with the remaining tortillas. Transfer half of the taquitos into the air fryer and air fry it for 5 to 7 minutes or until tortillas are crisp and slightly browned around the edges. Serve warm with guacamole.

How to make

Wash the rice well and cook it in a rice cooker. Take a tablespoon of water and heat it over medium-high heat in a nonstick frying pan to simmer. Add carrots, green onions, broccoli and cook until the onions are light in color for about 5 minutes. Add mushrooms, pineapple, spinach, chile, corn, and cilantro and mix well and turn it down to medium heat. Add 1 to 2 tablespoons when needed to keep the vegetables from sticking to the pan.

Prepare the sauce, with garlic, ginger, coconut sugar, and tamari in a small saucepan and stir it and let it cook for a minute until the sugar dissolves. Add ½ cup of water and mix the corn starch to the sauce, stir and cook for 2 minutes to make it thick. Once the rice is cooked put them into the pan with the veggies cooked by pouring the delicious sauce on top.
