There are many types of ice cream and may vary with thousands of sweet and savory flavors and additives. The ingredients are mixed together to incorporate air that increases the volume and then cooled below the freezing point. Different stirring techniques bring out a number of ice cream variations like frozen yogurt, gelato, frozen custard, and even vegan varieties.

How to make

Take a saucepan. Add milk, cream, and 1/2 cup sugar and combine it over medium heat. Cook it for 5 minutes until the sugar gets dissolved. 

Take a medium bowl and whip the egg yolks using an electric mixer. Add the remaining sugar and whip it for about 4 minutes together until the eggs have become thick and pale yellow. Pour ½ cup of warm milk and the cream mixture into the egg mixture and stir it thoroughly. 

Add it to the saucepan and cook over very low heat by stirring constantly. Make sure that the mixture becomes thick enough to coat the back of a wooden spoon, for about 7 to 10 minutes. Over a medium bowl, place a strainer and pour the warm custard mixture through the strainer. 

Stir in the vanilla and hazelnut spread until it dissolves and then chill the mixture completely before pouring it into an ice cream maker and the follow manufacturer’s instructions to freeze. To serve, scoop gelato into serving bowls and top with hazelnuts.


Strawberry Kulfi from India

This is a traditional Indian ice cream. This is made by heating the sweetened milk slowly and sugar should caramelize while the milk should be condensed. Kulfi is denser and creamier with a custard-like quality that lends itself well to being served on a stick.

This type of ice cream is flavored with aromatics like cardamom, rose, or saffron and popular flavors include mango and pistachio. It is different from other ice creams because Kulfi is not whipped and comes solid and dense. And it makes the kulfi causes it to melt more slowly than ice cream.


How to make

In a heavy bottom pot, add 2 cups of milk and bring it to a boil. Let it boil further for 10 minutes on a medium flame. Keep stirring to prevent the milk from getting solid. 

Add pistachios and saffron to the blender and blend it to powder and set aside. Add sugar to the boiling milk and continue to boil for another 10 to 12 minutes. Keep stirring occasionally. 

Add corn flour to 1 cup milk and stir well without making it have lumps. Lower the heat completely and pour it into the pot. Keep stirring and boil. Add nut powder and cardamom powder and mix well. 

Pour cream and cook for 6 to 8 minutes while keep stirring. Once it turns thicks, check whether it is of pouring consistency. Take from the heat and let it cool completely. It would get thicker. 

Use molds, popsicle molds, or steel cups, and pour the mixture into them. Freeze it overnight, immerse all these in a bowl filled with water for 1 minute, and rub the molds between the palms for 30 seconds. Hold the stick gently and demould it. Sprinkle the chopped pistachios and serve Kesar Pista kulfi.

Rolled ice cream from Thailand

This type of ice cream is from Thailand and is popular throughout Southeast Asia. This is made by heating milk, cream, and sugar and rapidly cooling them to produce the ice cream. 

It can be served upright in a cup and finished with a wide variety of toppings. It is a popular street food with a super velvety and smooth texture. The mixture will be poured onto a flat frozen surface and wait for it to get frozen. The rolls will be put in a specialized container and then top the sweet treat with a variety of toppings.

First, add the cream and condensed milk to a large metal baking tray and mix to combine to make the rolled ice cream base. 

Use an offset spatula to mix in the cream cheese, graham crackers, and strawberries to make strawberry cheesecake, and break up the chunks of each ingredient until the mixture is evenly combined.

Use an offset spatula and break up the Oreo cookies into small crumbs and combine it evenly combined throughout the ice cream base. Then use an offset spatula to mix the Nutella into the ice cream base and make sure that it is thoroughly combined and even in color.

These types of ice cream are famous ice treats. This is loved by most children around the world. This ice cream includes mostly water, sugar, corn syrup, stabilizers, and gum. This ingredient mixture will be frozen on the stick and you will feel the velvety and smooth texture.

Ice popsicles are super easy to make at home and they get frozen like an ice cube and made as a quick snack in the summer.

How to make

For the lemonade layer, take a small saucepan and heat sugar and 2 cups water and keep it over high heat, stirring occasionally until the sugar gets dissolved for about 3 minutes. 

Remove from heat and add lemon zest. Let it steep for 20 minutes and then remove the zest. Until completely chilled, refrigerate syrup, for 1 hour. Combine half of the syrup, 1 cup of lemon juice, and 1 cup of water in a measuring cup.

For the tea layer, place the tea bags in a measuring cup. Add 1 and 1/4 cups boiling water and let it steep for 8 minutes. Remove the bags and refrigerate the tea until completely chilled for 1 hour. Combine the remaining syrup, remaining 1 cup of lemon juice, and 1 cup of tea in a measuring cup.

Partially fill popsicle molds with either lemonade or iced tea mixture. Freeze until slushy, for about 1 hour. Insert Popsicle sticks and freeze until firm, about 1 hour. Fill molds to the top with the remaining mixture; freeze until firm, about 2 hours. And then serve.

This is a famous Turkish ice cream type and one of the most famous street foods. The Dondurma mixture has mastic and salep flour,  making it to get super dense, chewy, and malleable. Dondurma is famous because it is a small part of the culture to watch the vendors perform making Dondurma.

They will do a magic trick on you which would not be easy for you to hold the ice cream cone for the first time. They will serve the cone in a stick and then take it away right before it comes to your hand by rotating the stick. 

This is fun but sometimes it accidentally causes confusion and misunderstandings among the customers.


How to make

Take a large saucepan and combine milk, sugar, and salep powder. Use a hand whisk and whisk well. Put it over medium heat and cook stirring continuously until the sugar dissolves. 

Reduce the heat to the lowest. Keep cooking until it gets thicker in consistency which might take 15-20 minutes. Transfer it to a freezer-safe container and let it cool completely. Cover it with plastic wrap and put it into the freezer. 

Remove it from the freezer after 30 minutes and mix with a fork for 2-3 minutes. Fold in the icy bits on the edges of the container and put it back into the freezer. Repeat this 5 or 6 times every 30 minutes. Then you will see how it gets stretchy in the end and it will get really hard to mix.

Keep it in the freezer until serving time, at least for 5 hours, and take it out 15 minutes before serving. Then you can easily scoop it and serve it on the scone or on your desserts.


Sorbet ice cream

Ice cream is one of the best types of ice cream, especially for people who are with dietary restrictions, as they omit dairy, eggs, and gluten. It is denser and much richer in taste than traditional ice cream. 

It has the popular soft-yet-icy texture which is created by lowering the freezing temperature and sometimes adding alcohol to the recipe. It has become popular in the U.S. and has been around in the U.K., France, and Australia for even longer. It is often served at the end of a multi-course dinner as a palate cleanser.

How to make

Freeze the strawberries completely solid if they are not yet frozen. It should take 1 to 2 hours or leave it overnight. 

Then after freezing, place them into a bowl of a food processor or a heavy-duty blender and blend them until smooth. Add warm water and press it with a spatula to help along as needed. When smooth taste it and add raw honey as needed. 

For a soft texture, taste immediately or transfer into a freezer-safe container and freeze for 1 to 2 hours or until firm.
