- 1/2 cup toasted hazelnuts, crushed, for garnish
How to make
Take a saucepan. Add milk, cream, and 1/2 cup sugar and combine it over medium heat. Cook it for 5 minutes until the sugar gets dissolved.
Take a medium bowl and whip the egg yolks using an electric mixer. Add the remaining sugar and whip it for about 4 minutes together until the eggs have become thick and pale yellow. Pour ½ cup of warm milk and the cream mixture into the egg mixture and stir it thoroughly.
Add it to the saucepan and cook over very low heat by stirring constantly. Make sure that the mixture becomes thick enough to coat the back of a wooden spoon, for about 7 to 10 minutes. Over a medium bowl, place a strainer and pour the warm custard mixture through the strainer.
Stir in the vanilla and hazelnut spread until it dissolves and then chill the mixture completely before pouring it into an ice cream maker and the follow manufacturer’s instructions to freeze. To serve, scoop gelato into serving bowls and top with hazelnuts.
This is a traditional Indian ice cream. This is made by heating the sweetened milk slowly and sugar should caramelize while the milk should be condensed. Kulfi is denser and creamier with a custard-like quality that lends itself well to being served on a stick.

- 2 cups full-fat milk

How to make
In a heavy bottom pot, add 2 cups of milk and bring it to a boil. Let it boil further for 10 minutes on a medium flame. Keep stirring to prevent the milk from getting solid.
Add pistachios and saffron to the blender and blend it to powder and set aside. Add sugar to the boiling milk and continue to boil for another 10 to 12 minutes. Keep stirring occasionally.
Add corn flour to 1 cup milk and stir well without making it have lumps. Lower the heat completely and pour it into the pot. Keep stirring and boil. Add nut powder and cardamom powder and mix well.
Pour cream and cook for 6 to 8 minutes while keep stirring. Once it turns thicks, check whether it is of pouring consistency. Take from the heat and let it cool completely. It would get thicker.
Use molds, popsicle molds, or steel cups, and pour the mixture into them. Freeze it overnight, immerse all these in a bowl filled with water for 1 minute, and rub the molds between the palms for 30 seconds. Hold the stick gently and demould it. Sprinkle the chopped pistachios and serve Kesar Pista kulfi.

How to make
First, add the cream and condensed milk to a large metal baking tray and mix to combine to make the rolled ice cream base.

For the lemonade layer, take a small saucepan and heat sugar and 2 cups water and keep it over high heat, stirring occasionally until the sugar gets dissolved for about 3 minutes.

Take a large saucepan and combine milk, sugar, and salep powder. Use a hand whisk and whisk well. Put it over medium heat and cook stirring continuously until the sugar dissolves.
Reduce the heat to the lowest. Keep cooking until it gets thicker in consistency which might take 15-20 minutes. Transfer it to a freezer-safe container and let it cool completely. Cover it with plastic wrap and put it into the freezer.

Freeze the strawberries completely solid if they are not yet frozen. It should take 1 to 2 hours or leave it overnight.
