Take a large skillet and over medium-high heat, add the canola oil. Add carrots, mushrooms, and zucchini and cook and stir for 3 to 5 minutes until the carrots become crisp-tender. Add bean sprouts, spinach, soy sauce, water, and chili sauce. Cook and stir until the spinach is wilted. Then remove from heat. Take a large skillet and place 2 to 3 in. water with high sides. Bring it to a boil and adjust the heat to bring it to a gentle simmer. Break the eggs one at a time into the bowl, while holding the bowl close to surface water, slip the egg in it. 

Cook it for 3 to 5 minutes uncovered until the whites are completely set and yolks begin to thicken. Lift the eggs out of the water, using a slotted spoon. Serve the rice in bowls and top it with vegetables. Drizzle with sesame oil and a poached egg.
