Heat the saucepan on the stove over medium heat. Whisk the egg, and add honey, salt, half-and-half, milk, and rosemary to the pan.

Heat the mixture slowly, while stirring with a wooden spoon, just to a simmer, and do not boil.  Take it off from heat and cover with a lid for 10 minutes. Discard rosemary.

Cool milk mixture in fridge or freezer until cold.

Pour into the ice cream machine and freeze according to the machine’s directions. While the ice cream is freezing in the machine, add strawberries. Or use it as a topping.

This is a recipe that is easy to make. This is a cake layered with ice cream containing creamy goat milk. Moreover, it is naturally sweetened cranberry curd, with a nutty biscotti layer.

How to make 

To make the goat milk ice cream, 

First, take a saucepan and heat it over medium-low until just simmering. Add cream, milk, goat milk, honey, dry milk, salt, and thyme sprigs. 

Take a large bowl and whisk egg yolks together and then remove the milk mixture from heat, and slowly pour into yolks while whisking it constantly. After combining the milk and egg mixture, add it back to the saucepan over low heat and cook it while stirring constantly until it gets thickened and coats the back of a wooden spoon for 5 to 7 minutes. Remove it from heat and stain through a fine mesh sieve set over a bowl and discard the thyme sprigs and stir in vanilla bean paste.

Cover the custard and refrigerate until completely chilled, for at least 2 hours or overnight. Shift the custard to a bowl of an ice cream maker and churn according to the manufacturer’s instructions. Transfer ice cream to an airtight container and freeze until ready to use.

To make the Biscotti layer

In a food processor, process the biscotti until it gets finely grounded and then transfer it to a bowl. almonds and 2 teaspoons of thyme should be processed in a now-empty food processor. The  almonds should be finely ground and oil just starts to release

Then add ground biscotti back to the processor. in a microwave-safe bowl, melt butter and honey together. Stream in butter and honey and process until combined with the food processor running. 

Transfer to a bowl until ready to use.

After preparing all of them, 

Line a 9×5-inch loaf pan with plastic wrap. A third of the ice cream should be spread evenly on the bottom of the pan. For an hour,  freeze until firm. 

Half of the cranberry curd should be spread evenly over ice cream and frozen until firm. Sprinkle half of the biscotti mixture evenly over the curd and lightly press to compact. Freeze it until firm for about 30 minutes. 

Spread the remaining cranberry curd evenly over the biscotti layer and freeze until firm for about 1 hour. Sprinkle remaining biscotti mixture evenly over curd and lightly press to compact, freeze until firm, about 30 minutes. 

Spread remaining ice cream evenly over the biscotti layer, cover with plastic wrap and foil and freeze until firm, about 1 hour.

When ready to serve, invert the pan onto the serving. 

Frozen Honey-Vanilla Goat’s Milk

This ice milk is mild with its light texture and earthy taste from goat’s milk and honey. The flavor comes predominantly from honey.

How to make

Take a medium saucepan and pour 1⁄2 cup of the milk. Add honey, tapioca, and salt and whisk it until no lumps remain. Stir in the remaining 2 cups of milk. 

From the vanilla pod, scrape the seeds into the milk and drop them in the pod. The mixture should be heated over medium-high heat and stirred with a heatproof spatula. Wait until it begins to steam and slightly form bubbles at the edges. Adjust to a simmer and cook while stirring constantly.  The mixture should thicken to the consistency of a cream sauce. 

Keep it for about 2 minutes longer and make sure that you do not boil it fully. Remove from the heat.

The mixture should be transferred to a metal bowl set over a larger bowl of ice and water.  until the mixture is cool, stir it occasionally. Do not slash water into the bowl. At least for 2 hours, cover and refrigerate until very cold. Transfer the bowl to the freezer for the last half hour before spinning it.

Remove the vanilla pod. With a small amount of the goat’s milk mixture, stir the yogurt until smooth, then stir back into the mixture. Freeze in an ice cream maker according to the manufacturer’s directions.

Line a 13-by-9-inch baking pan, while the ice milk spins with waxed paper or plastic wrap and place it in the freezer. 

When the ice milk is ready, spread it evenly into the prepared pan, cover it with plastic wrap, press it directly against the surface, and freeze until firm, at least 4 hours or overnight.

In a medium saucepan, combine goat’s milk and honey and bring to a simmer while stirring often for about 12 to 15 minutes. In a medium bowl, lightly beat egg yolks and slowly mix in about a ½ cup of the hot milk, to temper the yolks.

Churn according to manufacturer’s directions. While it churns, prepare the caramelized walnuts and combine walnuts and 1 tbsp honey in a nonstick skillet. 

Cook over medium heat for about 4 minutes, stirring often. Set aside to cool. Once the ice cream is ready, fold in caramelized walnuts and cherries.

Add chocolate chips if desired. Churn an additional 5 minutes.
