So cotton candy grapes are something equally enchanting, whereas when you take an ordinary grape and make it roundish as big as a large gumball. It was not genetically modified but was created in a lab, by combining the two other grape species. It is a blend of the green grape and grape that is similar to the Concord. But the exact grape used is still a secret. 

This was developed by horticulturist David Cain and his colleagues at International fruit genetics in Bakersfield CA. There are dozens of varieties of grapes in the world, but many species are the quality of being easily damaged when shipping, therefore the grapes that are available in stores have been bred to withstand the shipping and the shelving. Therefore it was created to bring the real experience of grapes back to the supermarket. So the grapes will be similar, slightly bland, and flavored.

It became so popular, that the distributor who produces had to increase the number of acres that are devoted to cotton candy grape. 

What does it taste like?

The ordinary grapes taste juicy and sweet, but the cotton candy grapes taste like cotton candy and are bred to taste sweet. They taste like an airy, sugary dessert without the stickiness or the calories of real cotton candy. 

To consume the same number of calories as a candy bar, you have to eat 100 grapes. There are 18 grams of sugar per 100 grams of grapes, which is 12 percent more than the normal grapes. Although they do not add to your calories count, grapes are extremely sweet and have a flavor of vanilla. This gives the grape an extra hint of sweetness.

This cotton candy grape is packed with the same vitamins that you get normally in the green and red grapes. So that you do not have to feel guilty about eating this candy. It is not adding chemicals to make the grapes so sweet. But the grapes have almost no tartness and the grape varieties they select are to get the vanilla-like flavor. The sugar is high but far less than raisins.

How to make

Preheat the oven to 350°F.  Take a 9-inch springform pan, or a 9-inch nonstick cake pan and apply butter. Use a parchment paper and butter it again. Add 2 tablespoons of flour to the pan and shake it to make sure that the flour covers all the greased surfaces.  Remove the excess flour that has not stuck to the pan.

Take a small bowl, add flour, salt, and baking powder and whisk them together. Set aside.

Take a bowl of an electric mixer,  add eggs with two-thirds cups of sugar, and beat it for one minute until it becomes pale and slightly thicker.  Then add and beat the milk, melted butter, olive oil, lemon zest, orange zest, and vanilla. Add dry ingredients and mix them at low speed to combine.  Use a rubber spatula and stir in one and a half cups of grapes.  Transfer this batter to a pan and smooth the top with the spatula.  Take the remaining grapes and scatter them evenly over the top. Use one tablespoon of sugar to sprinkle it evenly and then bake it for 50 minutes or until the cake comes light golden in color. 

After baking, cool it for 15 minutes on the rack. 

Use a butter knife to slide around the inside edge of the pan to loosen the cake. Remove the latch on the side of the pan and ease the side of the pan gently off of the cake.  Slide a white metal spatula between the bottom of the cake and the pan.  Lift the cake and transfer it to a serving plate.
