In Camels,  between 90 to 95% of milk is stored in structures put in the under called the alveoli. They are tiny sacs lined with milk-producing cells. It produces far less milk than cows which is around 1.5 gallons (6 liters) per day whereas, a domesticated dairy cow produces 6 gallons (24 liters). 

A camel only produces milk when it has given birth to a calf. Then she gives milk for 1 to 1.5 years. To get 5 to 6 liters of milk per day, it has to be milked twice a day so they give 2 to 3 liters at a time. 

Four camels enter the milking parlor at the same time and calves are placed with their respective mothers. Calves start drinking and ensure the camels start producing milk. Then we can hang the milking cluster underneath. When the camel’s udder is almost empty, she would stop giving milk and always keeps something for her calf. 

The milk set is removed and the mother and calf go into the stable together. Then the calf drinks the last of its milk and both the dairy animals and calves are given chunks for them to give them nutrients to produce milk.

How to make 

Take a small pot and mix maple syrup and egg yolk.  Add this mixture of camel milk and mix. Heat it over medium flame and continuously stir with the help of a whisk until the mixture begins to boil.  Remove it immediately from the heat and play sit in a bowl and another container by passing through a fine-mesh strainer. 

Add salt and vanilla and mix it well. Allow the ice cream base to cool. 

Then according to the manufacturer’s direction, run the ice cream maker until the ice cream is at the desired concentration.  Serve the ice cream or transfer it into a closed container until it gets frozen.

Preheat the oven to 200C for 20 minutes. 

Take a bowl and beat the eggs,  camel milk, Parmesan cheese, pepper, and salt together until they found a custard-like consistency. Peel the sweet potato and cook it partially before slicing it into thin pieces. 

Then slice three tomatoes thinly. Take a baking dish and spray it with olive oil spray. 

Line the dish with a layer of sweet potato and follow up with a layer of tomatoes. Sprinkle the dried Chives and add a layer of spinach, and another layer of tomatoes, and again sprinkle dried chives.  Follow it by adding a layer of basil.

Pour the custard egg and camel milk mixture over the vegetable stack and sprinkle generously with a cup of grated cheese into the dish. Bake in the preheated oven until the custard has set and the cheese has browned.
