They are not leavened with baking powder as they do with cake. Therefore brownies are denser and heavier. They are served in cut squares or bars and are presented without icing, although they may be served with whipped cream or ice cream.

Brownies can be in three basic types. The first has a cakey texture with a more flaky crumb while the fudgy brownies are incredibly dense and more likely to be like chocolate fudge than cake. The chewy varieties have a chewy texture in the middle of the brownie.

The ratio of chocolate, butter, sugar, and flour in the recipe determines the texture of the Brownie.

If you do not want to use cocoa powder, then you can use unsweetened chocolate. All other chocolates will have sugar and take more adjusting to work in your recipe. A 1-ounce piece of unsweetened chocolate can replace 3 Tablespoons of cocoa. 

Your chocolate piece will have oil in it, so you might try leaving out some of the oil. Take 1 tablespoon of called-for oil for each ounce of chocolate substituted. Sweetened chocolate is not a reliable exchange for unsweetened chocolate in your recipes.

Fudgy brownie recipes without cocoa powder are delicious and easy to make, taking just 10 minutes. You get the softest and most moist brownies.

How to make

Preheat the oven to 350°F(177C°). 

Take an 8-inch square oven-proof dish and grease it while lining the bottom and the sides with parchment paper. On each side have two inches of overhang.  If you are using it in a small bowl,  Put the flour and salt and mix it and set aside.

In a small pan, melt the butter over medium heat until it is halfway melted.  Then take it from the Heat and stir until it is melted. The butter should not be too hot but should be warm.

Add the chopped chocolate to the butter and stir with a spatula. Do it for 20 to 30 seconds until all the chocolate melt and then set it aside.

Take a large bowl and place the sugar and eggs into it and still until it is combined for almost a minute. Do not over-mix. Then mix it in the vanilla. 

Into the sugar mixture, pour the butter-chocolate mixture and mix it until combined. Make sure to not mix it. Then add the flour and gently stir with a spatula until it is totally combined.  Fold the large chocolate chunks into the mixture.

Place the batter into the dish and bake for 35 minutes. Use a toothpick to check the wet crumbs when inserted.  If you find crinkles on the top and the top of the brownie is set, then it is a sign that it is almost done. 

After baking, the middle of the brownie may look puffy but it will come back to normal as it gets cool.  After 30 minutes check the oven as baking time may change from oven to oven.  Then let it cool in the pan for at least 1 hour and it should be preferably longer to cut neat slices.

Note: if you want more of a frosting, you can add more powdered sugar and the icing that eventually hardens. 

And for unsweetened chocolate, if you don’t like using the dark chocolate flavor then you can substitute it with chocolate chips for the unsweetened chocolate.

Preheat oven to 350°.

Take a 9″x 9″ pan and grease it. 

To make the Brownies, 

Take a bowl and add cream butter and sugar, then add eggs and blend well. Add dry ingredients until well mixed. 

Then add vanilla and chocolate syrup and mix it until it gets blended well. 

Take a greased pan and pour brownie batter. Bake brownies for 45-50 minutes. Make sure to not overbake them. 

To make the Frosting,

Take a medium-sized pot and add about 2 inches of water. 

On top of the pan, place a heat-proof bowl and add unsweetened chocolate to the bowl. Then turn the heat to medium to low and melt the chocolate in the bowl. Stir the chocolate constantly. Once the chocolate gets melted, remove the bowl from the stovetop and set it aside.

In another pan, place powdered sugar, milk, and butter and heat on the stove. Simmer on low heat for about 3-4 minutes until the sugar dissolves. Remove the sugar mixture from the stove.

Add the melted chocolate to the sugar and stir thoroughly. Spread icing over cooled brownies.

Hot Chocolate Brownies are dense, and fudgy, and can be easily mixed up in a bowl. This recipe uses melted butter with no electric mixer. You can use your favorite hot cocoa mix and there is no need for cocoa powder to make this delicious and yummy item.

First, preheat the oven to 350 degrees F. 

Then line the parchment paper to an 8×8-inch metal baking pan. 

You need to melt Butter and Sugar and to do this, add the butter to the microwave-safe mixing bowl and melt in the microwave for 30 to 45 seconds. Add the sugar, stir into the melted butter again microwave it for 30 seconds. 

Stir it one more and microwave it for a final 30 seconds. Wait until the mixture starts to bubble up. 

As the next step, stir in the chopped chocolate to the butter mixture and make sure it gets melted in the already warmed butter/sugar.

Whisk in the eggs and vanilla until combined. Then add the remaining ingredients.  Stir in the flour, hot cocoa mix, and salt to the batter. Mix until just combined. Take the lined pan and add the batter and spread out in an even layer. 

Bake in the preheated oven for 25-30 minutes and when it is baked, try checking with a toothpick and find out it comes with no wet batter. Don’t overbake. Allow cooling in the pan before lifting out of the pan and cutting into squares.

Rye Chocolate Brownies

These brownies have a flaky sugary top, along with chewy corners and a gooey center which you won’t find in many other recipes.  The rye brownie recipes without cocoa powder give them an even richer depth.

Preheat the oven to a 150°C fan. 

Take a 4 cm deep 15 x 25 cm baking tray and line it. 

Use a heatproof bowl and break up the dark chocolate. Add butter and set the bowl over a pan of simmering water. Make sure it doesn’t touch the water. Combine and stir it well and then remove it from the heat and leave to cool slightly. 

Whisk the eggs with the sugar until combined but not yet pale or fluffy. Over the eggs and sugar, pour the chocolate mixture and stir to incorporate. Stir in the carob spread or Nutella.

Add the whole eggs and whisk. Then stir in the flour and yeast. 

Cut the marshmallows into 4 pieces or use mini-marshmallows and add them. Pour the batter into the pan lined with parchment paper. Bake for 15 minutes.

Cover it with a sheet of aluminum foil so it would prevent the top from not getting brown in color too much. Bake for another 10 minutes. 

Even after baking, the cake should still be moist in the middle. Remove the cake from the oven, and let it cool before unmolding.

Cut into slices or squares. Serve warm or cold.

Tips to consider when baking brownies
